This recipe, adapted from Gwyneth Paltrow’s cookbook “It’s All Good”, is one of the easiest side dishes (or even full meal) I’ve ever made. You literally toss everything in a pan and roast it! Squeeze a little lemon, sprinkle a little chili pepper flakes and parsley — and voila.
I made this last night! I usually can’t be convinced to include (what I consider to be) superfluous herbs like parsley, but for this dish I did–and I’m really glad I did! It was a delicious, refreshing, and light dinner. I only wish I had discovered it in the colder months.
