They’re a savior to have on hand in the freezer.

They’re even better than I remembered… and so easy to make.

Basically take every nut and seed you have (I used almonds, walnuts, cashews, sunflower seeds, flax seeds, chia seeds, dates and coconut) and grind ’em up (I used my Vitamix, but you can use any food processor). Then mix that with a melty pot of coconut oil, almond butter, honey and vanilla… then freeze.

Luxury awaits.

And you’ll hopefully never eat a pre-packaged bar again :)

The official recipe is on Against All Grain’s blog… but you should tweak and play using your favorite nuts and seeds and make it your own. I smushed lotsa Enjoy Life grain-free, dairy-free chocolate chips in mine cause I wanna… enjoy life.

To celebrate, I made a batch of my favorite grain-free, dairy-free chocolate chip cookies.

I actually loved PT, and will miss it, but I know I now have all the tools and exercises I need in my arsenal to stay healthy and get strong.

My advice to anyone contemplating (or more likely, dreading) any kind of surgery you might need: do it. I limped around on my bad foot, in terrible pain, for almost a year. I struggled. I cried. Still, I denied it… until I couldn’t any longer.

The road to recovery is long, and can be brutal at times, but a life without pain is worth every minute it takes.

We all deserve a little treat.

Make yourself these cookies tonight — start to finish it’ll take you less than 30 minutes — and you’ll actually have a treat (or two) each day for the next week. They stay surprisingly soft in an airtight container outside the fridge.

PS if the recipe looks familiar it’s because they’re the same cookies I used to make those glorious ice cream sandwiches. I just didn’t flatten ’em before baking.

What better way to start the weekend?

Grain-free, Dairy-free Chocolate Chip Cookies

MAKES 15-20 COOKIES

Ingredients

  • 3 cups almond flour
  • 1/2 cup virgin coconut oil
  • 1/2 cup pure maple syrup
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp vanilla extract
  • 1 cup Enjoy Life semi-sweet chocolate chips (or any dairy-free brand)

Instructions

  1. Preheat oven to 375 degrees.
  2. In a medium-sized bowl combine dry ingredients: flour, baking soda and salt.
  3. In another small bowl mix eggs, maple syrup, and vanilla extract together.
  4. Pour wet ingredients into dry and mix together until combined.
  5. Melt coconut oil, pour into batter, and continue to blend until combined.
  6. Stir in chocolate chips. (The batter will be very wet.)
  7. On a parchment lined baking sheet, drop balls of cookie dough about a tablespoon in size. They will expand when you bake, more than you think.
  8. Bake for 15 minutes.
  9. Let cool outside the oven, then enjoy!

Notes

These will stay soft in a tupperware container for over a week — maybe more if you keep them in the fridge.

Man, I loved my chipwiches.

This right here is basically the adult version of that… minus the grain and the dairy. Lest you think it’s minus all the flavor, too, both my husband and best friend tried them — both of whom love their carby sweet treats — and loved ’em. What’s not to love about cookies and ice cream though, in any form?

So before summer’s over, get in on this recipe.

Grain-free, Dairy-free Ice Cream Sandwiches

MAKES 15-20 COOKIES

  8. Flatten cookie balls with back of a spoon — flatter is better for ice cream sandwich-making. If you want, leave some fluffy for straight cookie-eating.
  9. Bake for 15 minutes.
  10. Let cool outside the oven, then put them in the freezer for about 10-15 minutes.
  11. Scoop ice cream onto half the cookies, topping them with the other halves. Push down and freeze them for another 10-15 minutes… then enjoy!

Notes

These will keep in the freezer, inside tupperware, for about a week.

It’s the countdown to Thanksgivukkah (Thanksgiving and Chanukkah people, c’mon!) and the lovely folks at RedStamp asked me to share my latest recipe with them: gluten- and dairy-free french toast souffle.

It is so sweet. It is so delicious. And guess what? It is so healthy. Perfect for the whole family this week. Just make sure to have some fresh fruit (I used strawberries) and syrup handy to serve alongside.
