It seems like avocado toast is everywhere these days, and with good reason: it’s delicious and good for you! Even my friend Rina sold out the very kale salad that made her TV Dinner famous when she instagrammed this photo the other day exclaiming “avocado toast is the new kale salad.” I don’t disagree, but it still feels a bit harsh. And not all avocado toast is created equal. Just look at my homemade version above, in all her ready-to-devour glory.
Compare that with Tipsy Parson‘s version — served with tomato jam on the bottom, and a fried egg and sprouts on top — which I highly recommend.
Then there’s the makeshift version, that I made on whole wheat everything flagels (flat bagels) for my Mom and little brother when we were home in Philly last weekend.
Put whatever you want on it, and serve it atop whatever kind of bread you like. But whatever you do, make it soon for breakfast, lunch or dinner — it’s delicious at any time of day.
