Dale Radio so graciously asked me to be a part of his show “Spending Time With…” and I’m thrilled to share this episode with all of you, in which we cook ceviche tacos together. Dale is a total goofball character played by the delightful James Bewley and as you’ll be able to see, we had a blast. I hope you have as much fun watching as we did cooking. The ceviche tacos we made are light, healthy and can be served either as an appetizer with chips, or as an entree (as I did) following a big round of guacamole.
