The smell of fresh flowers and vegetables, talking to the farmers who grew and brought their goodness to us in the city, discovering new kinds of greens, dreaming up a menu for dinner that night… it’s heaven. And it’s exactly what B and I did this past Saturday at the Union Square Greenmarket. It feels good to support the local farmers and it feels even better to put all that fresh food in your belly.

The salad we created (pictured above): boston lettuce, radish sprouts (which had quite a spicy bite to ’em!), heirloom tomatoes and shaved asparagus on top. I tossed it all with two colors of sesame seeds, some chili flakes, lemon and olive oil. Simple perfection.

There was a while pre-wedding where it felt like we were ordering in or eating out much more than usual. It felt necessary… and it was fun and easy in a lot of ways, for sure… but I’m happy to be back in the kitchen making fish and vegetables on the regular for my husband. (Gotta keep off those L-Bs we lost for the big day!)

 

This oven-poached sole recipe is light but flavorful, sweet but with a little kick. (Tip: add more lemon for more sweet, more chili flakes for more kick.) While I made it with cod this time, I prefer it with sole or flounder because they’re a bit lighter. I’m sure you can even make it with tilapia or mahi mahi as well.

PS what did I do before all this Le Creuset came into my life?!

Oven-Poached Sole with Lemon + White Wine

SERVES TWO

Ingredients

  • 2 fresh sole fillets
  • 2 TBSP extra virgin olive oil
  • salt and pepper
  • 1 shallot, finely chopped
  • 3/4 cup dry white wine
  • 2 TBSP minced garlic
  • juice of 1 lemon
  • red chili pepper flakes, to taste

Instructions

  1. Preheat oven to 400 degrees. Drizzle olive oil to cover bottom of baking dish, then lay fish down flat and season with salt and pepper.
  2. Heat oil in small skillet and cook shallot until translucent, about 3 minutes. Add wine to pan, bring to a boil, then pour that mixture over the fish. Set skillet aside for later. Then cover the baking dish with tin foil and bake for 10-12 minutes, until fish is opaque in the center.
  3. Meantime, whisk together garlic, lemon juice, and some chili flakes in a bowl.
  4. When fish is done, transfer to a plate, then pour the leftover wine mixture from the baking dish into the skillet and turn the heat on high. It will reduce to about 1/2 cup. Stir in garlic, lemon juice mixture and allow it to keep reducing another minute or so, until thicker.
  5. Pour over plated fish and sprinkle more chili flakes if you like, then serve.

sea bass closeup, finalI’ve been a big fan of Of a Kind for a while now, so I was shocked — and disappointed in myself — when I saw them tweet about the 3rd volume of their cookbook a few weeks ago. Third! Where have I been? Not wanting to miss out on anymore one of a kind recipes, submitted by designers featured on their site, I ordered it right away.

Grace Lee’s Miso Sea Bass caught my eye immediately because not only had I not made sea bass in a long time — maybe ever for B? — but also because there are 4 ingredients for the entire recipe. Four! And one of them is the sea bass.

My friend (and former camper) Lara was going to be spending the day with me on Monday, documenting my whole day for her fun new photo documentary project, so I knew this would be perfect to make that evening. After an early morning at work, errands, and spin class, who wants to slave away in the kitchen and try to make sense of a complicated recipe? Not this girl.

I made it over simple, lemon roasted asparagus, but it would be delicious with any vegetable, really. Sea bass is definitely more expensive than other fish at the market, but man, is it worth it. B said it was the best fish I’ve ever made. What more can I say?

Since B is at work writing his second Page One story in two days (I know, he’s somethin) I’m testing out  a new veggie recipe here in the lovenest. My mom cut this out of the Philadelphia Inquirer for me while I was home last week and I’ve been wanting to adapt it a bit — more veggies, more flavor — so tonight’s the night. If B were here, I would’ve cooked a piece of fish alongside this — any kind, really — so my man gets his protein. But it’s just me! No one else to worry about! So you know what that means, right? While he’s hunkered down writing a follow up to this Al Gore/Al Jazeera story [feign your intrigue here] it’s time for me to live on the edge. And what says wild, crazy, sexy more than a girl home alone, in her sweaty Lululemon, oven-braising some veggies? Exactly. Best part about this recipe is that you really can’t screw it up — it’s so simple — and so healthy, too.
